It's Been A Week

Well friends, I survived the first week. Thankfully I had a cheat day to look forward to. I really feel that in order to be successful, you have to have a cheat day every once in a while. This week I was lucky enough to have an awesome cheat day, the Discount Tire's Annual Awards Dinner. My wonderful hubby is an assistant manager at the amazing Discount Tire and every year they throw a black tie ball for all the full time employees to celebrate their successes for the year. I love this party because I get to dress up pretty, stay in a fancy hotel, and eat 5 Star food that would normally cost me hundreds of dollars. Talk about best cheat day ever!!

The rest of the week I made sure to stay under the 2000 calories that my My Fitness Pal app suggested for me to meet my goals in a year. Here are some of the yummy things I feasted upon.



Creole Chicken and Rice - under 400 calories per serving (180 for the chicken and veggies and 200 for the rice) This crock pot creation is slightly spicy and super flavorful. Its got chicken, mushrooms, peppers, and onions. Just season your chicken, and throw it in the crock pot with your chopped veggies. Then about 10hrs later, serve over rice and you have an amazing dish that is sure to please. 



Roasted garlic and parmesan cauliflower (120 calories for 1/3 of a head of cauliflower) This was amazingly delicious and amazingly simple. I just drizzled some evo on my cauliflower and seasoned it with garlic salt and pepper. Then when it was about done I sprinkled some parmesan cheese on top and broiled it. My mouth is watering just thinking about it. 







I've given up pop and this is something that was suggested to me by a friend to satisfy my caffeine addiction. Water Joe is all natural, flavorless, and contains about the same amount of caffeine as coffee. In fact they use coffee beans to get the caffeine. I really can't stand plain water so I added some 0 calorie Kool-Aid water enhancer. Sadly, today I realized that the Kool-Aid stuff contains a sweetener that I really don't want to be consuming so after I finish this bottle I'll be looking for something else. 




These are my favorite snack right now. They taste enough like a candy bar to satisfy my cravings and they pack a serious protein punch to keep me fuller longer. And for only 190 calories they don't ruin my calorie count for the day. 



This week Josh and I plan on sticking to our low calorie diet by making some chicken noodle soup and some other great recipes that we have found online. I am super proud of how well we are both doing! I will start doing weigh ins when I get a scale. Anyone have any good suggestions for bathroom scales?

  1. Jess, I hate plain water, too. Try STUR... just got some and it adds a natural flavor with 0 calories, 0 sugars and you can add as much or as little as you want. :) The cauliflower dish looks YUMMY!
