Growing up, I never seemed to care much for eating cheese in my food. As an adult, I've been challenged on the subject of cheese and now my tastes have broadened. I am particular about the types I do enjoy, as I like fresh cheeses over grossly processed items. Over the past couple of years, I've started to experience the joy of tasting cheeses that come from individual farms rather than large vendors.
Thus, I was very excited at the opportunity to try Crave Brothers Farmstead Cheese. Located in rural Wisconsin, Crave Bros., a family owned dairy farm, started to make fresh cheese in 2001. Using green and sustainable farm practices, Holstein cows produce dairy milk that is shipped directly to the cheese factory, thereby producing fabulous farmstead cheese.
Crave. Bros sent me a Chocolate Pie Kit (complete with an Oreo Pie Crust and a 12 oz bag of chocolate chips), two 8 oz containers of Mascarpone Cheese, a 8 oz container of the new Chocolate Mascarpone Cheese, a Crave. Bros cooler, a Crave Bros. notepad, a recipe card, and a brochure about their farm and cheeses. I was slightly worried about shipping the cheese as warmer weather has hit NC, but there was no need! The shipment box contained an insulated bag and reusable refrigerator packs to keep the products fresh and cool!
The Chocolate Pie Kit is so easy use!
1) Remove Mascarpone from fridge to soften up.
2) Remove wrapping from Oreo Pie Crust.
3) Melt 8 ounces of Chocolate in a Microwavable safe bowl.
4) Using a spatula, mix melted chocolate with two 16 oz. Mascarpone Cheese containers.
*An added note also reminds the Pie-Maker that a favorite liquid "spirit" such as Kahlua or Baileys Irish Cream can be added into your mixture. Due to lack of items in the household, I did not partake in this step, but it sounds yummy!*
5) With spatula, dump entire mixture into pie crust.
6) Cover pie. To set, place in fridge at least one hour.
7) Cut and eat a fabulous chocolate pie!
*Note- the instructions do not say to soften the mascarpone. I did not do this first. The mascarpone was too stiff to stir by hand (possibly using a mixer would have made a difference) so I had to wait until it softened to get all of the lumps out. *
So, readers, you might be wondering about the taste and texture of Mascarpone Cheese. Mascarpone is a sweet cheese used mainly in desserts, such as tiramisu, pastries, and trifles. Crave. Bros describes their Mascarpone as "silky and rich" and made with "farm fresh sweet cream." I have to admit- before mixing the chocolate and cheese, I had two spoonfuls of the Mascarpone on it's own. It was a very tasty smooth cheese! While made with sweet cream, the mascarpone itself is not overly sweet. It can be used as a spread on cookies and fruits, as a replaceable for casseroles, or as part of a blend for dips and desserts.
The chocolate Mascarpone is just as wonderful. Anyone who knows me knows that I have an affinity for all things chocolate, so to make a chocolate cheese is absolutely wonderful! I haven't finished it yet, but have used it as a dip with local fresh strawberries and have been thinking it would go great with biscotti or sugar cookies!
