This go- around, instead of heading to my nearest Jersey Mikes, I decided to try them at home!
This is a super quick and easy meal for the spring; as we run around and achieve all these end-of-year tasks thrown at us. No matter if it's game night, squeezing in a 45 min pilate session, or talent show practice, these subs will have your dinner on the table fast!
Of course, you can cook via the stir-fry method, but I decided to throw everything into a crockpot.
Combining the ingredients when I came home from work (this is easy to do when coming home from school pickup, before running out the door again), I then left it for about 2.5 hrs (on high) before returning back home to eat.
Ingredients:
- 14- 16 oz Shaved Steak (most major grocery stores have this in already prepped packages)
- 1- 2 Sliced Onions, depending on your preference
- Sliced Bell Peppers (these can be bought frozen, or pre-prepped in the veggie aisle)
- 2 Cups Beef Stock (use whatever you have- chicken is fine too. I even substituted some with water because I was low).
- Seasonings to taste (1/4- 1/2 tsp each)
- Garlic
- Salt
- Pepper
- Hoagie Rolls
- Sliced Provolone Cheese (or whatever your favorite/ preferred is!)
Some love mushrooms in their sandwiches, but I can't eat them, so I always skip that- but do note that if yours family's favorite!
Instructions
- Combine everything into crockpot on high. Stir, and place lid on. Come back in about 2 hrs - 2.5 hrs and check to see if the meat is cooked. If you want to do the slower method, leave it for 6-8 hrs.
- Preheat Oven to 375 (or 400, if you like crispy)
- Place Hoagies on a sheet pan and fill inside with the mixture. The bread can be brushed with olive oil or butter, but I hardly ever add this item.
- Place Cheese on top.
- Bake for about 8 mins, or to whatever your preferred level of toasty bread is desired!
- Add whatever condiments and/or other toppings you might like on your sasndwich.
