Got Squash? Try This Easy Squash Fritter #Recipe


Sometimes during the summer I have so much squash that I don't know what to do with it all.  I usually bake it, make a casserole or fry it.  I saw these yummy squash patties go across FB one day and since I had some I thought I'd give them a try.
They were so easy to make and we loved them.  They didn't turn out as pretty as the ones I saw on FB, but as long as they taste good, right?

They are greasy...we did soak in paper towels to take some of the grease off.

Squash Patties

2 cups yellow squash, finely chopped
1 cup onion, finely chopped (I did not use this because we don't like onions)
1 egg, beaten
1 teaspoon salt
1 teaspoon pepper
1/4 cup plus 1 tablespoon all-purpose flour
oil

In a large bowl, combine squash, onion, egg, salt and pepper.  Mix well.  Stir in flour.  In a skillet, heat oil over medium heat.  Drop batter into oil and cook about 3 minutes on each side or until golden brown, turning once.  Drain on paper towels.
