No-Sugar-Added Banana Bread

This bread is very moist, but not overly sweet!  A great option for breakfast as toast or as a treat that won’t ruin your whole day!

Ingredients
  • ¾ Cup Applesauce or 2 small apples
  • 1 egg
  • ¼ Cup Heavy Whipping Cream
  • ½ stick (1/4 Cup) Butter, melted
  • 2 very ripe bananas, mashed or chopped
  • 1 tsp Vanilla
  • 1 ¼ Cup Whole Wheat Flour
  • 1 tsp Salt
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • 1 tsp Cinnamon
  • ¾ Cup Chopped Walnuts
  • ½ Cup Golden Raisins
  • *If you want a sweeter bread, add ¼ to ½ Cup Maple Syrup, Honey, or Brown Sugar.

Directions
  1. If using apples, peel and chop then steam in a little water, till soft, about 15 minutes.  If using applesauce, proceed to step 2.
  2. Preheat oven to 350* and Grease bottom(s) of 1 large or 2 small loaf pans.
  3. Sift dry ingredients together (flour, salt, baking soda, baking powder, cinnamon) and set aside.
  4. Mix wet ingredients (applesauce, egg, cream, butter, bananas, vanilla, and sweetener, if using). Slowly add in dry.
  5. Add in walnuts and raisins (or your choice of mix-ins).
  6. Pour into greased loaf pan(s) and bake until a toothpick comes out clean; about 30 minutes for 2 small pans or 1 hour to 75 minutes for one large pan.
  7. Allow to cool before slicing and enjoy.  Can be stored at room temp for up to 4 days, in the fridge for 10, or frozen to enjoy later.
