Double Decker Chicken Caesar Sandwich #Recipe


Tired of the same old boring sandwiches for lunch? It's time to rethink lunchtime! I am on a mission to keep from grabbing lunch out (so easy to do), and to save our family money, so I've been trying to think of creative new lunches for us to enjoy at home. B (my five year old son) is used to enjoying the same type of lunch after preschool every day. I, on the other hand, like a little variety.

My sandwich options have become slim, considering that I am expecting, and cannot eat cold deli meat right now. Sometimes a gal just wants a cold turkey sandwich, ya know? I enjoy cold cuts, and veggie sandwiches, and I also enjoy salads at lunch time- so I thought, why not combine those elements and make a Double Decker Chicken Caesar Sandwich?

How good does this sandwich look?

To make this yummy sandwich, you will need:
3 slices of good Italian bread
Creamy Caesar Salad Dressing
2-3 pieces of Romaine Lettuce
2-4 Slices Oven Roasted Chicken Breast (you could also use turkey)
Grated Parmesan Cheese (Optional)

*I heated my sliced chicken through in the oven before making my sandwich.


Spread a thin layer of the dressing on each slice of bread. Be careful not to add too much- you don't want soggy bread. Add romaine lettuce on top of the middle and bottom layers of bread.

Add chicken to the bottom and middle layers of bread.

Stack your sandwich.

Top with the 3rd slice of bread, and cut in half.

Serve and enjoy!

I didn't add the Parmesan Cheese to my sandwich, but the next time I make this, I probably will, just to give it that extra little flavor bite. Though this was made with a small loaf of bread, the sandwich was incredibly filling. It was so yummy, and I can't wait to make it again!
