Inspiralize the Spring with Tuttorosso #Review and #Giveaway


Right around this time of the year, I begin my search for "light" recipes. I don't know about you, but my body starts craving fruits, vegetables, and lighter dishes as soon as the sun starts shining a little longer during the day. I wish it was something that happened throughout the year, since I put on quite a bit of weight this winter, but that's a story for another post! 

One of my favorite Spring/Summer treats are tomatoes. I love fresh from the garden tomatoes in my salads, I love handfuls of cherry tomatoes as a snack, I love beefsteak tomato sandwiches, and I love love love Tuttorosso tomatoes enhancing some of my favorite recipes! 





Tuttorosso is based in the Midwest and is proudly grown by Red Gold, a third generation family owned and run company. Their tomatoes are carefully grown in Indiana, Michigan, and Ohio where the climate and soil are perfect for growing tomatoes. This Spring, Tuttorosso is teaming up with Ali Mafucci of Inspiralized to host an "Inspiralize the Spring" Facebook promotion taking place March 25, 2015- April 15, 2015. Through the promotion you could win many great prizes, including aprons, cookbooks, and even an Inspiralizer (the official spiralizer of Inspiralized). 




I received an Inspiralized Tuttorosso Kit which included a 28 ounce can of crushed tomatoes with basil, a 28 ounce can of  no salt added peeled plum tomatoes, and a 28 ounce can of diced tomatoes. The kit also had a selection of recipes pairing spiralizer-based meals with Tuttorosso tomatoes. I could not wait to put them to use! 



I wanted to try the recipes that were shared in the kit exactly as they were written,but sadly the Inspiralizer is still only available for pre-order. I didn't feel that using my veggie peeler would yield the same results (or maybe I was just being a little lazy), so I decided to just substitute with plain old pasta. Hopefully I will be able to get an Inspiralizer in my kitchen soon!

I tried the Pasta Arrabiata recipe (slightly modified) with spaghetti. It was absolutely delicious (Drew had 3 bowls!) but I cannot wait to try it with the carrot noodles. This was just one of the recipes shared in the kit, but I cannot wait to try all 5 of them as well as the other Inspiralized recipes shared on the Tuttorosso Website!


Pasta Arrabiata with Carrot Noodles Recipe

1/4 cup extra virgin olive oil
 5 garlic cloves
1 (28 ounce) can Tuttorosso Diced Tomatoes in Rich Tomato Juice
1 (28 ounce) can Tuttorosso Tomato Puree (we used the can of crushed tomatoes with basil that we received in our kit)
2 teaspoons crushed red pepper
1/2 teaspoon dried oregano
Salt and black pepper to taste
3-4 large carrots, peeled, Blade C (we substituted the spaghetti)
1/2 cup grated Parmesan cheese
1/4 cup fresh basil leaves, thinly sliced

1. Heat the oil in a large saucepan over medium heat. Add the garlic and cook about 3 minutes, or until the garlic is lightly browned, being careful not to burn. Add in diced tomatoes and tomato puree, bring to a boil.

2. Reduce the heat to low, stir in red pepper, oregano, salt, and black pepper. Cook uncovered for about 20 minutes, stirring occasionally.

3. While the sauce is cooking, bring a large saucepan filled halfway with water to a boil. Once boiling, add in the carrot noodles and cook for 2-3 minutes, or until noodles are al dente. Drain into a colander and set aside.

4. Once the sauce is done cooking, remove from heat, fold in the cheese and basil, and toss well to combine. Add in the carrot noodles, toss and transfer to a large pasta serving bowl.

I think that while I am waiting to get my hands on an Inspiralizer, I will be trying out some of the other ways to make noodles out of vegetables. I am really looking forward to finding new ways to incorporate more fruits and vegetables into every meal.

  1. Love using my peeler to make veggie pasta. Try asparagus, with shrimp and lemon juice over quinoa, with a hint of smoked salt. Yum!
