Quick, Easy & Budget Friendly Biscuit Calzones #Recipe #TastyTuesdays



2014 was a bit of a crazy year for Cory and me. We ended going from a 2 income household to a 1 income household. I was able to quit a terrible job, but it hasn't been easy for us. That being said, we have been budgeting like crazy and I have been setting a grocery budget of $100.00 for two weeks. It's been crazy coming up with 14 meals plus lunches and snacks but I started shopping at Aldi's and I am able to stick with my meal plan and budget. 

One cheap and quick meal that we enjoy is our version of a calzone. I call it Biscuit Calzones.


What You'll Need

1 Can of 8-10 count biscuits.
(you can use what ever kind you like. I change mine from time to time.)
                              1 Jar of your favorite marinara sauce. 
                              1-2 cups of Mozzarella Cheese
                              
                              For the filling, you can honestly use whatever you want, we used 4 left over meatballs and pepperoni. Also, typically, calzones have ricotta and egg, but hubby doesn't like it, so we skip that part. 

Pre-heat oven to 375 degrees. Take biscuit dough and pull out half the dough and smash and stretch as much as you can. Next lay flat dough onto a cookie sheet leaving half an inch in between each piece. Place in pre-heated oven for about 5 minutes, or until dough starts to turn a golden color. Do not cook all the way. 

Once brown, remove from oven. Spoon on marinara sauce evenly, stopping just shy of the edge of the dough.  Add fillings and then cheese. Take the remaining dough and flatten them out as you did before. They don't have to be the same size, but try to get them as close as possible. Once flat, place on top of the other pieces and press the edges together.  Bake for 15-20 minutes making sure dough has cooked through and the fillings have heated all the way through. 

After they are done, I brush with butter and sprinkle garlic on top. These make pretty large servings, and can easily be cut in half to share for a smaller meal or for little ones.
