Tasty Tuesdays: Gluten Free Chocolate-Chocolate Chip Cookies #Recipe


Happy Tuesday! We're heading into the new school year, and I expect to be doing a little baking here and there, so that I can present my son some special treats. Not long ago, my sister, and MBP Contributor Brittany, found out that she needed to start following a gluten free lifestyle. I began looking for some simple recipes to try, which were gluten free, so that I would at least have the knowledge to make a few things that my sis can enjoy the next time she's here for a visit. I wanted to start simple, so I began with a chocolate cookie- something that most folks enjoy. To make these mouth-watering cookies, which contain zero flour and taste like little brownie bites, you will need the following:

1/2 cup softened butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup cocoa powder
1/2 cup semi-sweet chocolate chips

Here's everything you'll need to make these yummy cookies! You probably already have most of the ingredients lying around at home, so these are great go-to cookies for last minute gatherings, treats, etc.

Step 1: Preheat the oven to 350. Cream the softened butter and sugars together.

Step 2: Add the egg and vanilla.

Step 3: Add the cocoa powder, baking soda and salt to the wet ingredients.

Step 4: Mix together.

Your cookie batter should look something like this.

Step 5: Add the chocolate chips. *You can mix it up by using white chocolate chips, mint chocolate, peanut butter chips, butterscotch, etc.

Step 6- Spoon the cookie dough onto a lightly greased cookie sheet and bake for 8 - 10 minutes.


Your cookies will look something like this. Yummy!

Now, remember- there is no flour in this recipe, so the cookies are a bit thin. However, they're still incredibly delicious, and they're an amazing alternative to a traditional cookie with flour in it. These actually taste sort of like brownies, and are amazing with a bit of vanilla frozen yogurt!

Pack them up and take them along with you to share with friends!

I wound up with a lot of cookies, so I took them to a musicians rehearsal at my church, to share them with my friends. I sort of assumed that everyone would be skeptical of trying these cookies for a couple of reasons:
1. I am a terrible baker (most of the time).
2. The cookies are gluten-free, and that sometimes turns people off.

I was so surprised that everyone wanted to try the cookies, and even more surprised when I noticed that there were only a few cookies left in my carry along box. I actually had to ask for a couple for cookies to be left, so I could take a couple of them home to B, who requested them. Everyone raved about these cookies. They couldn't believe how delicious they were for being gluten-free, and I know they'd love for me to make and bring more of these to an upcoming rehearsal night.

So moist, chocolatey, delicious, and best of all- they're gluten free!

Be sure to keep this recipe on hand. So many folks are having to adjust to a gluten-free lifestyle, and it's really wonderful to have a cookie recipe on hand that's easy to follow, and leaves you with delicious cookies to share!
