I have to let you in on a little secret- I am not a very good baker. I can cook like a pro, but when it comes to baking- even baking simple things for dinner, I seriously fall short. It's a great help to me to have wonderful cooking and baking tools at my disposal, as I set out to make a wholesome weeknight meal for my family. I have a lot of bakeware that I use on a semi-regular basis, but it's been difficult to find a baker that doesn't end up leaving me disappointed with the outcome of my dish.

Casserole dish, plus a few extra goodies, to add some zest to my meals!
The Fantasia Bake, Serve and Store Casserole is part of the gorgeous Fantasia product line by Princess House, which features bakeware and serving pieces that any host or hostess would be proud to use on a daily basis, or show off to friends and family! The Fantasia 3 qt Casserole is called the 'Miracle Dish,' so when I caught word that I would be receiving my very own miracle dish, I was excited, and ready to hold it to some pretty high standards!
When my package arrived from Princess House, I couldn't wait to see what was inside.

As if the casserole dish alone wasn't enough of a treat, I also received a bottle of Grapeseed Oil, and three of Princess House's seasoning blends: Miracle Chicken, Miracle Rice and Meatloaf/Meatball Blend. I couldn't wait to taste test these!
I had to start somewhere, though- and thought it would be best to start out by using the Fantasia Bake, Serve and Store to bake some chicken in for our dinner one night. So, I took a couple of boneless, skinless chicken breasts and sprinkled a little bit of the Grapeseed Oil over it, just to sort of coat it. I then sprinkled a bit of the Miracle Chicken Blend seasoning all over the chicken. I placed it in a 350 degree oven for about twenty-five minutes, with the lid on.

The glass lid really helped to seal in the juices, and the dish overall, gave us a nice, tender baked chicken dinner. I was extremely pleased with the outcome of the chicken- as it was just right, and not at all tough or rubbery.

Chicken and Stuffing Casserole
I love all of the different functions of the pieces of this incredible 'Miracle Dish!' I've used the glass lid just to warm rolls up on, for microwave cooking, serving, etc. I've used the casserole dish itself about ten times since I received it, and just absolutely love it. It's the perfect size for making main dishes and casseroles or side dishes, and I love that it is so convenient to store leftovers right in the same dish I baked or microwaved in! It looks beautiful at the table for serving, and is super easy to clean! My husband's favorite dish that I've made in the 'miracle dish' thus far, was the chicken and stuffing casserole that I made last week. He's already asking me to make it again! Pure Grapeseed Oil from Princess House
Remember those extra goodies I mentioned earlier? I am new to cooking with grapeseed oil, but now that I've started using it, I don't know that I want to go back to using olive oil. I love this fresh, pure tasting oil- sprinkled over veggies while they roast in the oven, tossed over greens, and even coating my meats, as they sit and absorb herbs and spices! This oil is all natural, has been known to lower cholesterol, and doesn't smoke or burn while cooking! This is a must-have in your kitchen, if you love using olive oil to create yummy oils for bread dipping, or for drizzling over salads, pastas, etc!
All Natural Miracle Blends from Princess House
And last, but certainly not least, we come to the three delicious Miracle Blends that I was sent to try out. I received the Miracle Rice Blend, Miracle Meatloaf and Meatball Blend, and Miracle Chicken Blend. Each of these blends contains an exquisite combination of all natural herbs and spices. As I looked over the ingredients, I recognized everything listed. My favorite herbs and spices were all represented, and I couldn't wait to try them to see the variety they could add to our usual old dinner dishes.
I already told you about how I used the Miracle Chicken Blend- but I have one thing to add: The combo of the herbs in this blend smell exactly like the blend used in one of my favorite boxed pasta salads. I mixed a teaspoon of this blend with some of the grapeseed oil, tossed it with some tri-colored pasta, added some fresh cheeses, and bam- fresh, homemade pasta salad that was even better than what I've loved from that box all these years!
Meatballs made with the Miracle Meatloaf/Meatball Blend
The Meatloaf/Meatball blend is delicious! We rotate between meatloaf and meatballs every couple of weeks, and the last time we had meatballs, I used this Meatball Blend. My husband immediately asked what was different, and then added that he approved of the taste. Whew! We loved the change-up, and our meatballs will never go back to plain Jane!
We eat a lot of rice, so the Miracle Rice Blend was really nice to try. My husband is not usually a fan of flavored rice, but he really enjoyed the herbs flavoring our rice. It was so easy just to sprinkle it in, and mix with the rice, for a little added zest!

Wow. April C. is pretty dang intense. Anyway, I am here to tell you something you may not know about your beloved Miracle Dish... I too own this beautiful dish and... You can cook a whole 4 to 5 pound chicken in the MICROWAVE in as little as 30 minutes. I know, when people hear "chicken in the microwave" their initial reaction is "no way." Let me tell you, this is no joke, it comes out juicy and delicious with a crispy skin. You take some of that miracle chicken seasoning and add some olive or grapeseed oil until it forms a rub and you rub down the whole bird. Then, you squeeze half a lemon over it and stick the other half lemon inside the chicken. Put the glass lid on, put it in the microwave for 30 to 35 minutes, and voila!! Comes out almost like a rotisserie. You flip the glass lid.over and use it as your stylish and beautiful serving tray. I work in the afternoons so I prep my chicken and get it in the dish in the morning and stick the whole thing in the fridge. When my husband comes home from work, he just has to pull it out and sit it on the counter for 10 minutes to adjust the temp, then throw the whole thing in the microwave and I have a hot and ready meal when I walk in the door. I love this dish. I hope you try this, it really is delicious.
