Chicken and Broccoli Crescent Roll Wreath (Recipe)

We've had a crazy weekend, and it's a good thing I made a meal plan to carry us through. We had a yard sale on Saturday morning, and boy- was that a lot of work to put together! I wanted to make something for dinner that would be pretty low-key, and not too stressful or time consuming for me.

I decided to plan to go with an old favorite- a wreath made from crescent rolls, and stuffed with yummies! There are a lot of variations to the crescent roll wreath, which I will gladly post about as we have them. I wanted to make something I knew my husband would enjoy, though, so I went with a chicken and broccoli stuffing mixture. We truly enjoyed it, and even Balian ate it, so I must have done something close to right.

Here's the recipe...

Chicken and Broccoli Crescent Roll Wreath

You will need:

1-2 boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup diced yellow or white onion
2 crowns of broccoli or 1 bag frozen broccoli florets
1 cup of shredded cheese of your choice
1 can of refrigerated crescent rolls
2 tbsp. white wine (optional)
4 tbsp butter
Splash of milk
Salt and Pepper to taste

Directions:

In a medium heat skillet, saute the chicken and onions until cooked through. Add salt and pepper to taste. Try not to let the chicken brown. You may add a splash of water, if needed, to keep the chicken moist. Add the butter, and coat the chicken and onions. Add a splash of milk- 1 tsp at most, stir. Slowly add the cheese (I used a mixture of cheddar and provolone). Turn the heat to low, and let the cheesy melt slowly. Gradually add the white wine, stirring occasionally. Depending on how think or how thick you'd like the sauce to be, add a sprinkle of flour to thicken, or add more milk to thin. If you'd like it just a little creamier, add another tbsp. of butter. 

Chicken and cheese mixture...

Steam the broccoli- fresh on the stove, or frozen in the microwave. If the broccoli is frozen, and not in a steamer bag, just defrost it and drain any excess water.

Add the broccoli to the chicken and sauce mixture, and gently fold, and stir. Allow the mixture to meld together for about five minutes on low heat.

In the meantime, take eight refrigerated crescent rolls, rolled out, and place them in a circle, overlapping the edges. The long points should be facing outward- you'dd end up with what looks like a star burst of dough.

Spoon the mixture onto the widest part of the crescent rolls. Make sure each roll gets equal filling, and then add more if you have extra. Gently lift the points of the crescent rolls and fold them over the mixture, tucking the end under the widest part of the crescent roll.

Add the chicken and broccoli mixture...

You should end up with a wreath-shaped meal!

Make your wreath...

Bake in a preheated 375 degree oven for 15 minutes, or until golden brown.


Dinner is served!

Serve with a salad or your favorite side dish.
Makes 8 roll-ups, serves 4 - 5.

We thought this turned out pretty great! The mixture for the filling is my own concoction- sometimes, you just have to play around with ingredients. Even my picky eaters loved this, which makes me feel pretty confidant that your family will love it to!

Hmm... what to stuff our next wreath meal with? Oh, the choices!
