The holidays are officially over and it's time to get back to our regularly scheduled meals.. and budgets. If Asian food is calling your name, but you don't want to spend the money on apps, the meal, and delivery; then try some quick and easy recipes at home!
For those of you that have to feed a large family with kids, these egg rolls are the perfect way to add some pizzazz to your evening meals!
Egg Roll Ingredients are easy to find and obtain.. some already in my home, some I had to purchase:
- IngNasoya Egg Roll Wraps
- Packet of Coleslaw Mix or Fresh Veggies (Cabbage, Carrots, Onions, etc.)
- Minced Ginger
- Minced Garlic
- Soy Sauce
- Hoisin Sauce (if you prefer.. I generally leave it out)
- Oil (Sesame and Regular Canola Oil)
- Ground Protein, if desired
Steps:
- Grate or Mince ginger. I have a small food processor that makes that super easy.
- Add the Coleslaw Mix or Fresh Veggies to a wok/ large pan with some oil (I happened to have Sesame at home, so I used that), and cook. Add Ginger & Garlic, cook. Season if you like, but its not really needed. (If cooking protein, add first, cook, then add veggies so they don't get overcooked)
- Take (1) Egg Roll, and place diagnoal in front of you. Place mixture in center (prob about 1/4 cup)
- Dip fingers into water and wet the edges of the roll. Fold edges over center, then roll away from you to form a tight cyclinder.. or, whatever shape it turns out to be. We aren't a restaurant serving standards, but the tighter, the better, as it means it's less likely to fall apart.
- Putting too much filling in results in a square shape like mine :)
- Frying Egg Rolls
- One can use the Air Fryer (350 for 7-8 mins) or be brave and do the fry in oil method; your choice. Obvs the air fryer is WAY less work. Whatever you do, brush each egg roll with oil beforehand.
- Oil: I used Olive Oil, but I think Canola or Veggie oil would be better in this recipe. I'd also not go lightly, too.
- Cook egg rolls until golden brown, or whatever your preference is!
This is a versatile recipe too! One doesn't necessarily need wrappers to make traditional egg rolls. Grab some rice or noodles to make your favorite Egg Roll in a Bowl!
Sauces:
One cannot have egg rolls without sauces. Perhaps your favorite leftover Chinese take out sauces are already in the fridge, but if not, check out this Sweet Chili Sauce.
Mine came out thicker than needed, but it's still super great. One of the best things is that you can adjust the heat level according to the needs in your family!
It's a stovetop recipe, but so simple to make with most ingredients already at home! (I used Tomato paste in lieu of sambel oelek, but I don't like my sauces extremely hot anyway!)
Maybe it's an at-home date night, a way to be adventerous during these cold January days, or just don't want to spend the $$ on take out; this is the perfect recipe for movie nights, quick and easy meals, etc. It didn't take that long to make compared to any other meal either!
