Even the beach is not immune to this insane cold front that's been making temps icier than Jack Frost. While most people love soups to keep them warm, I'm rather picky and really dislike soup overall.
Yet, French Onion Soup. Yep, I'll take the time to make it (although I gotta be careful with acid reflux... love onions, but sometimes they dislike me!). The combination of the carmelized onions, broth, and grueyere cheese makes this such a tasy dish!
Check out the Pioneer Woman's version! A few things I did differently:
- I didn't use any wine or alcohol because that really does kick up my acid reflux.
- I used a crockpot for the actually cooking of the soup rather than stovetop
- I do not put my bread into the ramekin before baking the cheese. I use it as a dipper instead. (I know, that's not the traditional way, but there's something about dipping crisp bread into broth rather than the bread sitting in the broth, becoming gummy).
- Use what you have instead of buying new products. If it's chicken broth, great. If it's beef broth, great. I also used minced garlic rather than fresh, because that's what I have!
