While we didn't receive any of that wintry precipitation on this end of the state, it's mighty cold this morning. After a 40-minute walk of becoming a popsicle, because the dog decided he wanted an early walk, I knew I wanted a sweet but easy breakfast. I am so not in the mood for complicated today. In fact, hibernation from life sounds good.. but alas, reality will call soon.
Anyway, I open up the fridge and see that I have a can of biscuits that will expire soon! Perfect! One of my friends made a sweet monkey bread over the Thanksgiving holiday and it's made me want the traditional variety.
I seriously made this in 10 minutes, cooked it in 30 (while showering, making coffee, unloading dishwasher, etc), so it's easy to make and really doesn't take that long! One could even do all the work the night before, and pop it in the oven while you are getting the kids up and ready. While this is still a school day, it's perfect for those lazy mornings soon to come during Christmas and Winter Break.
I created a variation of Ree Drummon's Easy Monkey Bread recipe. As I'm solo, I only need 1 (one) can of biscuits and not that much of the other stuff. So this is for the size bread pan you see above. If you have a full family eating, then I'd definitely go for Ree's full recipe and use a bundt pan!
My ingredients included:
- 1 can of premade biscuits (like Pillsbury)
- 1/2 cup of brown sugar
- 2 tablespoons of cinnamon
- 1 tsp of cloves/ nutmeg (whatever spices you prefer)
- 1 tablespoon of vanilla flakes
- Preheat your oven to 350
- Grease whatever mold you are using (bread pan, bundt pan, etc)
- Mix your sugar/ cinnamon mixture.
- Take 1/3 of your cinnamon sugar mixture and add it to a 1/2 cup butter
- Melt that butter/ sugar mixture in the microwave (I do 25 secs, stir, then another 15-20 secs depending on how hard it is)
- Cut your biscuits up into sections
- Toss your biscuits into the sugar/ cinnamon mixture and coat all the pieces
- Line coated pieces into your pan, layering as necessary. Remember, it doesn't have to be neat so this can be done fast!
- (Note, if you are adding liquid vanilla or another flavoring, I'd add it to the butter right at this stage). Pour the butter mixture over the monkey bread, basically drowning it.
- Bake for 30-40 mins, depending on the size of your pan and your oven's temperament :) Sometimes for me, the outside looks done, but the inside is still a lil bit raw, so you might want to check that too.
- If you feel inclined, mix some powdered sugar with milk for an icing topping (or if you have cream cheese, that makes an awesome topping too!)
