It's a feels like of 53℉ with ongoing rain and winds. It's officially autumn!
While my inner spooky is like "yay", my body moans and groans because wet toes, achy knees, and headaches aren't kind, especially after long dog walks with a pup that doesn't care about the rain.
Warm baths. Fuzzy Blankets. Cozy leggings. These are the ways that I can wrap up and stay physically warm, but sometimes I crave hot wintry type foods.
Full admission. Growing up, I hate most of these foods. From pot roast to soup, I either refused to eat or would eat a bit to appease the adults, then go for the breads or other items I do like.
Now, it's hit or miss. In a recent butcher package, I was sent some beef short ribs, and after researching recipes, I decided on a crockpot classic. Google is now our friend with recipes, so you can select and add seasonings, veggies, and whatnot to your heart's desire.
What I used:
1) a package of beef short ribs (thawed)
2) a yellow onion
3) a few red potatoes
4) frozen carrots
5) seasonings included salt, herbs, black pepper, garlic, and a French onion mix I've had in the pantry
Throw it into your favorite slow cooker/ crock pot, and cook on high for 3.5–4 hours… or you can cook on slow for around 6.
Most recipes suggest searing & browning the ribs on the stove top before the crockpot, but since it's just me, I skipped that step.
One could also use a Dutch oven and cook at 275 for a few hours in your stove also.
