As a first-time mom, one of my top priorities is introducing my son to healthier food options. I strive to be the kind of mom who makes everything from scratch and serves picture-perfect meals, but I know that being a mom—especially while working full-time—isn’t always effortless.
What I love about this pancake recipe is that it’s a healthier alternative to traditional pancakes and incredibly quick and easy to make. I often whip up a batch on Sundays to prep for my son’s morning snacks at school. Here’s how to make these delicious banana pancakes!
Ingredients:
- 1 ripe banana
- 1/2 cup all-purpose flour
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Spray, butter, or oil for the pan (I prefer unsalted butter!)
Instructions:
- Mash the banana in a bowl.
- Combine all the ingredients and mix well.
- Heat your pan and lightly grease it.
- Pour the pancake batter onto the pan in your desired sizes.
- Cook over medium heat until slightly browned on each side.
This recipe couldn’t be simpler! It takes about 10 minutes from start to finish and is perfect for my 9-month-old to hold and feed himself. Since we introduced solids at 6 months, these pancakes have become a true favorite. I highly recommend pairing them with mixed fruit for an extra tasty meal!
