Looking for an easy family dinner? This pepper steak sub has become one of my favorite go-to meals! It all started after I had a life-changing sub at a local spot in my hometown. It was one of those meals you wish you could have over and over again. Unfortunately, buying that meal frequently would get expensive, so I decided to recreate it at home.
As a meat, cheese, and bread enthusiast, it's no surprise that even a simplified version of this sandwich scores a 10/10 in my book. The great thing about this recipe is its versatility—customize it to your taste! Tonight’s recipe is a simplified version paired with homestyle potato wedges.
Ingredients:
For the Sandwich:
- 6 hoagie rolls (fresh from your local grocery store)
- 14 slices of sandwich steak or Steakums
- 4 slices of Swiss cheese
- 2 bell peppers
- Seasonings: salt, pepper, garlic powder, and onion powder
- Butter (for the buns)
For the Potato Wedges:
- 6 medium russet potatoes (russets typically have a longer cook time, so microwave them for 5 minutes before baking)
- Vegetable oil
- Seasonings: Italian seasoning, garlic powder, onion powder, salt, pepper, and a pinch of cayenne powder
Instructions:
- Preheat your oven to 425°F (220°C).
- Prepare the Potatoes:
- Wash and cut the potatoes into wedges.
- Place the potatoes in a microwave-safe bowl with about half an inch of water and cover with a damp towel. Microwave for 5 minutes to precook.
- Drain any excess water and spread the potatoes on a baking sheet.
- In a bowl, mix 1 tablespoon each of garlic powder, onion powder, and Italian seasoning, 1 teaspoon each of salt and pepper, and a pinch of cayenne with 2 tablespoons of vegetable oil.
- Toss the potatoes with the seasoning mixture until evenly coated.
- Bake in the preheated oven for 20-25 minutes.
- Prepare the Peppers:
- Wash and cut the bell peppers into thin slices.
- In a pan over medium heat, cook the peppers for about 10 minutes, or until softened. Transfer to a bowl and set aside.
- Cook the Steak:
- In the same pan, cook the steak, seasoning with a dash of salt and pepper. Break apart the steak as it cooks.
- Once the steak is fully cooked, combine it with the cooked peppers.
- Assemble the Sandwiches:
- Spread butter on the inside of the hoagie rolls.
- Spoon a generous amount of the steak and pepper mixture onto one side of each roll.
- Place half-slices of Swiss cheese on top of the filling.
- Place the sandwiches on a baking sheet and put them in the oven alongside the potatoes. Bake until the cheese melts and the bread gets crispy.
- Serve and Enjoy:
- Plate the sandwiches and potato wedges together.
- Enjoy this quick, delicious, and budget-friendly meal!
Notes:
- The beauty of this recipe is its flexibility. For a fancier touch, add grilled onions, mushrooms, or even banana and jalapeño peppers.
- My husband prefers his with mayonnaise, while I like mine without. Customize to your preference!
This meal is not only delicious but also quick to prepare, with overlapping cooking steps that make the entire process about 30 minutes. It serves 4-6 people and is perfect for meal prepping leftovers. I can't recommend it enough and already can’t wait to make it again!
