My Favorite Easy Fall Soup

 


Vegetable Beef Soup


1 lb Ground Beef

16oz bag frozen mixed vegetables 

15oz can of petite diced tomatoes

1 can condensed tomato soup

3 1/2 c. Beef broth 

2 tsp Worcestershire sauce 

2 tsp Italian seasoning 

1 tsp garlic (minced)

1 small onion (diced)

2 potatoes (diced)

Salt & Pepper


1. Cook ground beef in large pot until browned and cooked through. Drain excess oil and set beef aside. 

2. Add diced onion to the pot and cook over medium until onion is slightly softened and turning translucent. Add minced garlic and stir for 30 sec. Return cooked beef to pot.  

3. Add Italian seasonings, Worcestershire sauce, beef broth, tomato soup and diced tomatoes. 

4. Bring pot to boil and lower to simmer. Add frozen vegetables and diced potato. Return to boil then simmer for about 10-15 min until potatoes are cooked through. Season with salt and pepper to taste.

This soup is so yummy and easy to make! A real comfort food dish! Goes great with warm bread ❤️
