Down to the last bits of odds and ends in the pantry and fridge? Let's make a quick lunch of it!
It's grocery shopping day, which means I'll be restocking the pantry and fridge. Leftovers from meals are usually gone by this point in the week, and I'm over eating ham and cheese sandwiches (my husband could eat one every day, though!).
With a few simple ingredients, you can make a crunchy and delicious quesadilla, using whatever you have left in the pantry and fridge. Last night was Taco Night, so I used what was left from that meal to make my lunch today.
I used:
2 small flour tortillas
1/4 cup shredded cheddar cheese
2 tbsp queso
2 tbsp tortilla chip crumbs
Shredded lettuce
1 tbsp sour cream
1 tbsp mild salsa
Directions:
Grill the tortillas on a griddle or skillet until golden in color and crisp.
Add shredded cheese to one of the tortillas. Top with the 2nd tortilla and keep on the griddle or I'm the pan on low heat until cheese is melted. Optional- add your choice of meat, veggies, beans to the middle of the quesadilla with the cheese.
Place on a plate and get creative!
I added a thin layer of queso to the top tortilla.
Top with shredded lettuce.
Add a small scoop of salsa and sour cream... guacamole, too, if you have it- I was fresh out.
Slice it up like a pizza and eat with your hands or just dig in with a fork and knife, like I did.
My mom was the queen of using whatever was left at the end of the week to create meals. I'm glad she passed some of that frugality and creativity down to me. Thanks, mom!
