Happy Saturday, friends! Today is National Pie day, which is good because this mom is in the mood to do some baking. First, I'll have to run a few errands, including picking up a pie dish since I got rid of the one I had because I never used it. Last month, when I baked a pie, I had to use a cake pan. It was tasty, but I'd still rather have the pie dish.
 

Last month I found an easy pie crust recipe and I'm too glad to make use of it again today. Now, I just have to determine the filling. I am leaning toward peach. 

We don't have too much else to do this weekend, except for a few projects around the house. Today we'll be revisiting the dining room/arts and crafts/school area on our (seemingly) never-ending quest to get our space organized better. It's making me sleepy just thinking about it. 

Today might actually end up being a 2 cup of coffee day.
