Steak Stuffed Peppers for an Easy Gourmet Meal at Home

 


While the days are shorter, it's easy to feel a bit more tired around dinner time. Believe me, I am certainly feeling that after working all day, managing kids, finishing homework, and prepping for the next day. No one should have to spend hours in the kitchen to prep, cook, and clean up or feel like they have to constantly pick up take out because they feel like they don't have time to cook. Finding easy recipes that are super quick to make, and require very little work or clean up are go-tos for me, especially on weeknights. Today, I'm excited to share a super quick and delicious recipe for Steak Stuffed Peppers!


This recipe is fantastic because it is so versatile. You can use any peppers you like, and could even swap out the steak for chicken, ground beef or ground turkey. Stuff with veggies to keep it vegetarian friendly!




STEAK STUFFED PEPPERS

You Will Need:

1 -2 large bell peppers

2 - 4 small steaks

Steak seasoning

Provolone Cheese

Crushed fried onions or Panko


Directions

Wash the peppers, and slice in half (length-wise). Remove seeds and place in a baking dish. Drizzle with Olive Oil

Pop into a pre-heated 375 degree oven for 15 - 20 minutes.


While the peppers are baking...

Season the steaks with your choice of steak seasoning. We used McCormick's Montreal Steak Seasoning. Let steaks come to room temperature.

Over medium heat, add the steaks to a warm skillet. Sear on both sides. Remove from heat, and let rest. After 10 minutes, slice steaks into thin pieces. Set aside.


When the peppers are done...

Peppers should be semi-soft.

Remove from the oven and fill with slices steak.

Top with Provolone cheese, sprinkle with fried onions or panko.


Place peppers under the broiler (on high) for 1 - 2 minutes to brown the cheese and topping. Watch it so it doesn't burn. Remove from the oven and serve immediately.


Halved peppers are very filling, especially when they are overflowing with steak and cheese! Change the fillings up and make these your own. It's a great way to use up leftovers, or to feel like you're eating something fancy, when you spent little to no time throwing this meal together!
