Crockpot Recipe- Carne Asada Roast


Hi friends.  I wanted to turn you onto a new recipe that I tried this week.  It wasn't something that I read about or even watched in a video... it came to me walking the aisles of Stop and Shop.  It was 2 ingredients and my handy dandy crockpot to make this dinner and I have to say I was not let down.
I haven't been inside the local Stop and Shop for some time, partly because of covid, but mostly because I find their pricing very expensive as compared to other stores in my area.  This week, I didn't have a choice, because I needed to do the grocery shopping and didn't want to waste my days off going to the store so I waited until after work on Monday and shopped on my terms.  For those of you that don't know me, grocery shopping makes me very anxious.  It always has because no one seems to share the aisle, have the patience for someone walking "too slow" or just common decency for others.  I equate most trips to road rage and it makes me opposed to going there.  

Obviously, this is not something that can be helped.  My laziness last weekend forced my hand and here I went.  I do not make lists when I shop, because I feel I always stick with the basics and get the same ingredients.  I walk up and down the aisles and hit the meat department last.  Stop and Shop has renovated since I was last in and none of the aisles were the same.  At first, I was frustrated but it led me to a product I would never have seen or just skipped on by.  It was a bottle of carne asada marinade that sounded interesting and I already chose a roast so I grabbed it in place of the other ingredients I use to make a roast and it did not disappoint. 

As soon as I got home from the grocery store, I started this roast.  I poured half of the marinade into the bottom of my crockpot placed the roast on top and the rest of the marinade on the top.  I cooked on low for 16 hours.  I served over some steamable rice with veggies and here was dinner.  I have never been one to try new foods or poke around with new ingredients because I feel intimidated in the kitchen.  I don't feel like I belong attempting cooking or prepping.  I am getting better at it, but sometimes I mess it up.  I am so glad my husband is willing to try my food at least once and if he doesn't like it, we don't make it again.
