With the holidays coming up chances are you may have some family and friends visiting soon. Here's a quick breakfast/brunch idea that everyone is sure to love! I call it the "Holy Guacamole Breakfast FritTOTa".
A few months ago my friend, and Epicure Consultant*, Dana sent me a few samples. One was the CCB dip mix that I used for the "Near Effortless Slow Cooker Pork Shoulder" recipe I shared here and the other was the Guacamole dip mix, which I used for this recipe.
Holy Guacamole Breakfast FritTOTa
Ingredients:
6 eggs
1/2 pepper, diced
A handful or two of leftover tater tots, cut in half
A splash of milk
1 Packet (0.4 oz) of Guacamole Dip Mix
Directions:
Preheat your oven to 400°
Whisk the ingredients together in a bowl and add to a parchment paper-lined baking pan
(I used an 8.5-inch square glass baking dish)
Bake your FritTOTa at 400° for 25 minutes, or until the top is set.
Enjoy with some toast, a bagel, or on its own.
