I love cooking, but I still like trying to find the easiest possible way to make something delicious for dinner once in a while. I believe that using a slow cooker is one of the best ways to achieve the easy/delicious balance and this recipe is so easy, it's near effortless!

Near Effortless Slow Cooker Pork Shoulder

Ingredients:

2-3 pound boneless pork shoulder (ours was just over 2 pounds)

1 onion, sliced 

2 Tablespoons chili powder

1 1/2 teaspoons salt

1 1/2 teaspoons pepper

1 Tablespoon cumin

1 packet (0.3 oz) CCB Dip Mix*

Directions: 

Mix the chili powder, salt, pepper, cumin, and packet of CCB dip mix together in a small bowl. This is going to be a dry rub for the pork shoulder. Once the seasonings are combined, place the pork in the bottom of the of your slow cooker and pat the dry rub all over it, covering well.

Slice the onion and place it on top of the pork shoulder. Add the cup of water (or broth) to the slow cooker, cover and cook on low for 6-8 hours. 6 hours will give you "slice and serve" meal while 8 hours will likely give you more of a "pulled pork" meal.

We served our pork with some yellow rice and a nice salad. The only thing I regret....not making mashed potatoes to go on the side instead of the rice.
