Caramelized Banana Pancake Recipe



Here's a fun little recipe that you can whip up with some ingredients you most likely have laying around!



Caramelized Banana Pancake

Cast of Characters:

1-2 Bananas (1 is pictured, 2 were used)
Vanilla
Instant Pancake Mix 
Brown Sugar
Butter
Salt
Cinnamon

I have to apologize because I do not have measurements for this recipe. I'm calling it a recipe, but it's really more like a guide. Just add as much or as little as you like of every single ingredient and you really cannot go wrong!


Melt a few tablespoons of butter in a skillet. Slice bananas on an angle and add to the butter. Simmer on LOW for a few minutes. Add a few tablespoons of brown sugar and continue to simmer on low. I then added the vanilla, cinnamon and salt. I kept the heat on low so the sugar would not burn and harden.

If you want to stop at this step and scoop this deliciousness over a bowl of vanilla ice cream, you're welcome! Hehe. This is positively scrumptious on it's own too. Side note- swap the bananas for apple slices and let your mind run wild on that one! 

Next, mix together your favorite instant pancake mix. I chose to change things up a bit this time and I added dairy-free snickerdoodle flavored creamer INSTEAD of water or milk to my pancake mix. I thought it would add a nice flavor. I liked it, but if you're not used to dairy-free flavors, stick to what you know or just use water.


I just mixed up enough for one large pancake since it was just going to be my husband and I enjoying it on this particular occasion. This is a rich pancake and isn't really the type where you make a huge stack. It's more of a special treat and even dessert.



Pour the pancake batter over your caramelized bananas and then cover with a lid. You'll want to let this sit at the lowest setting on the stove for at least 5 to 7 minutes. You can check periodically to see if it's cooked through but the low setting is key. With butter and brown sugar in the pan, you do not want that to burn.

In order to turn this out, I placed this white plate over the pancake in the pan and flipped the pan over, revealing the caramelized side! 


It's really, very good and quite the special indulgence! 


Is he a good sport or is he just lucky? You be the judge. He always eats what I put in front of him. I'm a very blessed lady for that, I know! I actually think my hubby could possibly be the easiest man on the planet to please. I'm so thankful for that! I'm also glad he doesn't mind me coming in and interrupting his work day to shove food at him and take his picture, hehe. Maybe he is a good sport.
