You guys know how much I love to use my crock pot and I love soup just about as much! We had an early snow here in NC and I put on a crock pot of potato soup for our snow day dinner. It is so, so simple.
My friend recently told me about this soup so I decided to give it a try and I have to say it's become my favorite. I'm going to tell you how I make it, but I don't have measurements. My friend just told me ingredients and I just put them in and it is delicious!
Diced potatoes and chicken broth
I use the whole container
Ready to eat
Here's what you need:
Potatoes: peeled and diced
Chicken Broth
Heavy Whipping Cream
Optional:
Bacon Bits
Shredded Cheese
Sour Cream
Garlic Powder
Biscuit pieces
Add entire container of chicken broth to the crock pot. Then add your peeled and diced potatoes. I also sprinkle with garlic powder. Cook on high 6-8 hours. About 2 hours before it's finished, add a container of heavy whipping cream and bacon bits (if you choose). Top with shredded cheese and sour cream (if you want it have a baked potato taste). The first time I made this, I added pieces of canned biscuit to give it some dumplings. It was okay, but I like it better without them. If you decide to try it with the biscuits, they need to be added at the beginning so they aren't doughy. When I added them to mine they only cooked about 2 hours and they still had a doughy texture.
