Let me just start this by saying that I have not made this yet but I am making it next week for 2 different Thanksgiving dinners. My cousin made this for our Family Reunion last weekend and it's one of the yummiest things I have had in a while and I wanted to go ahead and share it with you all before Thanksgiving because it would be perfect on your table.
Potato Casserole
Preheat over to 350.
1/2 cup melted butter
1 pt. sour cream
1/2 cup chopped onions (we don't like onions so I will leave these out)
1 tsp. salt
1 (2 lb. bag) hash browns
1 can Cream of Chicken soup
2 cups grated cheddar cheese
1/2 tsp. pepper
Mix these 8 ingredients well in a large bowl and spread out in greased casserole dish.
Topping
2 cups crushed corn flakes
1/2 cup melted butter
Mix and pour this topping mixture over the casserole.
Bake 40-50 minutes and enjoy!
My cousin did use diced potatoes on the casserole she brought to our reunion. I loved the diced potatoes in the casserole. She didn't care for it that way and said she would definitely use shredded the next time that she made it. She said that it was very easy to make, so I am looking forward to sharing it next week.
