Dinner Idea: Tomato,Basil & Mozzarella Paninis

Got a waffle iron? Of course you do. In the back of the cabinet in your kitchen that stores things you don't use. Here's a great way to put that relic to good use: Paninis! 

Tomato, Basil & Mozzarella Paninis (aka Caprese Waffle Sandwiches)


Whole Wheat Bread
1 bag (2 cups) of shredded mozzarella cheese
2-3 Roma Tomatoes, sliced thinly
1 red onion, sliced thinly
1 bunch of fresh basil
Olive Oil
Salt & Pepper

Brush one side of each slice of bread with olive oil (for browning in the waffle iron). These will be the outsides of your sandwich. 

Assemble the sandwich: Bread slice (olive oil facing down), onion slice, basil leaves, handful of mozzarella, tomatoes, salt & pepper, Bread slice (olive oil facing up)

Place sandwich in preheated waffle iron. Smash down top. Allow to cook until cheese melts/bread is toasted. 

Serve with soup or chips or salad or whatever is easy. Tip: if your kids will not eat tomatoes, basil or onions (collective sigh), make life easy and just make a grilled cheese. Bam! You've been #momsplained.
