Low Carb Sausage & Veggies (One Dish) #Recipe


My husband and I have really been trying to cut back on our consumption of carbs. We find that when we do, we both slim down, and feel better overall. It's amazing what all that sugar does to our bodies! There are a lot of wonderful low carb recipes out there that I am dying to try, but my husband is such a picky eater, that we wind up having the same sorts of meals over and over again. Desperate for something different, we came up with a one-pan dinner that cuts out the carbs and leaves us satisfied. Only one pan to clean up afterward? You betcha!


We really enjoy kielbasa sausage but were so used to cooking it up with potatoes and apples, the way my mom used to make it when I was growing up. We didn't know then what we do now about sodium, carbs, etc, so we watch what we eat and choose to lower our sodium intake as well as our carb intake to help us stay healthy and to keep our bodies strong. Now, sausage has a lot of sodium- there isn't much getting around that. If we do have this meal, we really watch our sodium consumption for the rest of the week.

You will need:
1 Kielbasa sausage, sliced
1 medium zucchini, sliced
1 package of frozen peas
1 package of steamed cauliflower rice

Add the sausage to a skillet over medium heat and cook until the desired amount. We like our sausage crispy, so I turn up the heat and let it crisp on both sides. Add the sliced zucchini, and saute with the sausage until tender. Add the frozen peas and cook until tender.

Steam the cauliflower rice in the microwave.

Now, here's where you can get creative...
Stir the cauliflower rice into the skillet and mix with the other ingredients or serve the sausage and veggies over the cauliflower rice, or enjoy it on the side. I like to mix it all together! If you'd like to ad in other veggies, go for it! This would also taste great with roasted bell peppers! Yum!


The last time we made this, we actually tossed steamed broccoli in with the dish in left the peas out. It tasted great! We always sprinkle a bit of Parmesan Cheese over the finished dish, and serve it right up & enjoy it! This recipe serves 3-4 people.
