Easy Banana Muffins (Nut-free) #Recipe


Do your kids like those little muffins that come prepackaged in the little pouches? They are super convenient, and my kids both love them. Last month, however, I looked at how much we were spending each month on those little muffin pouches, and it was nearly $20.00! I don't pride myself on being much of a good baker. I usually leave the baking to my husband, but last week, I was at my wit's end over how much we had spent on these little muffins, and I was determined to just make them myself. I tweaked an old recipe that I had for banana bread and wound up making a few dozen mini muffins, instead. They turned out so well, and the kids ate them right up! Read on for the recipe.


Easy Banana Muffins (Nut-free)

Ingredients
2 to 3 very ripe bananas, peeled
1/3 cup melted butter
1 teaspoon baking soda
Pinch of salt
3/4 cup sugar 
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups of all-purpose flour

Mash the ripe bananas in a bowl. Mix all wet ingredients together in a bowl, pour into mashed banana mixture. In another bowl, sift together the dry ingredients. Add dry ingredients to the banana mixture and mix until all of the flour is incorporated.

Preheat the oven to 350 degrees. Prep a mini muffin tin by lightly greasing the cups. Use light butter or baking spray, like Baker's Joy.

Fill the muffin cups about 1/2 full of the batter. Bake for about 10 minutes, or until muffins have risen and are a nice golden color. Cool on a plate of baking rack. Store in an airtight container for up to one week, or store in the freezer for up to 3 weeks.


These muffins are so moist and delicious! They are perfect for breakfast. Baby S loves these, and there are no nuts or chocolate chips in them. The next time I make a batch, I will drop a few chocolate chips into the muffin cups for my son. You could certainly add chocolate chips or nuts to this recipe if you wanted to.

Want to make a banana loaf instead? Pour batter into a greased loaf pan and bake at 350 degrees for about 50 minutes. Let cool completely before slicing, and use a serrated knife for best results.
