Easy Crock Pot Chicken and Dumplings #Recipe


If you love comfort food, you're going to love this easy recipe for chicken and dumplings. This is something that I loved growing up, and still enjoy eating as an adult. I'm not a huge fan of traditional dumplings, so being able to use biscuit dough to make the dumplings in this dish is tasty and convenient. You'll just need a few ingredients, your crock pot, and a hungry tummy to enjoy this classic family favorite!

You will need:

3-4 boneless, skinless chicken breasts
2 Tbsp butter
2 cans cream of chicken soup
1 (14.5 oz) can of chicken broth
1/2 onion diced
1 Tbsp dried parsley
1/2 can refrigerated biscuits (I decided to use most of the biscuits for extra dumplings & used Annie's Organic.)

Directions:

Place the chicken in the crock pot and top with butter.
Add 2 cans of cream of chicken soup
Add chicken broth
Add diced onions and dried parsley (optional)
Cover and cook on high for 4-5 hours or low 8-9 hours
Shred the chicken
Cut biscuits into small pieces
Add biscuits to the soup and stir, or layer them on top if you like a little crunch
Cover and cook on high for another hour
Serve & enjoy!

Add the biscuits near the end of the cooking time, then cover and cook for another hour.

My husband is not a big fan of crock pot meals, but he absolutely loved this and has already asked me to make it again. This was the first time he ever tried chicken and dumplings, and I was thrilled that he loved it. We're trying to eat more low carb meals, but allow ourselves a cheat night or regular meal once a week. This is definitely going to be one of the cheat night meals that we keep on rotation during the winter. It's hearty, homey, and simply delicious. The ingredients are inexpensive, and this makes a lot of food. You can easily feed a family of 4-5 with this meal, or you can have leftovers for the rest of the week.

I love using the crock pot for cooking. Don't get me wrong, I love cooking on the stove, or using the oven, but with two kids and a busy schedule, the crock pot is a life saver. I use it once or twice a week (and would use it more often if my husband would eat more crock pot meals), and hope to start using it for meals other than just dinner.
