Monday nights are busy for our fanily, and we tend to get home between 7:30 - 8 pm. Our son has an 8 pm bedtime on weeknights, so we need a quick and tasty meal to enjoy when we get home, so we can get him to bed as close to on time as possible.
One of our favorite go-to recipes for the crock pot, is Crock Pot Chicken Taquitos. It's so easy that I have it memorized, and it only takes five ingredients. I can throw everything right into the crock pot after lunch, and then dinner will be ready by 6:30.
Here's what you'll need to make these crunchy, savory taquitos:
2 Boneless, skinless chicken breasts (fresh or frozen)
1 Package of taco seasoning
6 oz cream cheese
1/4 cup water
1 1/2 Cups shredded cheddar cheese
*Small tortillas

Place the chicken into the crock pot. I put mine in frozen.

Pour the water into the crock pot. Sprinkle taco seasoning over the chicken.

Add the 6 oz of cream cheese over the chicken (cube it first).
Set the crock pot- cook on low all day, or set it to cook on high for 4-6 hours. When using frozen chicken, I use the high setting, and then my crock pot automatically goes to 'warm' after the timer goes off.
Once time is up, shred the chicken with a fork. It should fall right apart.
Add the cheese in, and cover with the crock pot lid for a few minutes so the cheese gets melty.
Stir the chicken and cheese mixture.

Fill small flour tortillas with the chicken mixture.
Roll tortillas up, and spray them with olive oil cooking spray in a baking dish.
Bake at 400 degrees for 12-15 minutes or until golden brown.
If you use the tiny shells, they will only need 8-12 minutes. We used larger shells this time around, and they baked for 15 minutes.

Top with sour cream (add salsa, cilantro, etc) and enjoy!
We love these! My hubby is asking me to make them every week! I won't make them that often, because I don't want to get sick of them... but once or twice a month would be great. Hubby suggested that we make a bunch of these for our next family gathering and serve with Mexican Sour Cream Rice. I think that's a great idea! These taquitos will leave your family's tummies very happy!
