Easy Veggie Pizza
I LOVE vegetables! I was actually a vegetarian for 4 years and in those 4 years I learned a few things about what do to to jazz up my veggies. One of my favorite things is homemade veggie pizza. You honestly don't even miss the meat!

I start with a store bought thin crust and a jar or pre-made pizza sauce, you can use whatever kind of sauce and crust you like. Then I top it with thinly sliced zucchini.. |

Next comes fresh spinach and canned mushrooms. Canned mushrooms have a more meaty texture to them so this helps my husband not be overly sad that he isn't getting any meat. |

Then I add fresh sliced mushrooms and artichoke hearts. I like to add onions too but I forgot to buy them. |

And I top it with half a bag of part skim mozzarella cheese, you can use more if you wish. |

After the cheese, I finish my pizza with some thinly sliced yellow squash and throw it in the oven. Normally Id let the cheese cook a little longer on my pizza, but we were in a hurry the night I made this one and I took it out sooner. |
