Getting to Know You Thursday with Penny


Hey friends!  Thanks for stopping by to see what I've been up to!  It's been busy.

Good Eats...What's for dinner tonight?

We are having Ranch Buffalo Chicken from the crock pot.  I did a day of meal preps so I would be set for when school starts back.  I spent $230 at the grocery store and I put 33 crock pot meals in my freezer.  I'm so excited about this because we are trying very hard to not eat out.  Look for the recipe on an upcoming Tasty Tuesday.  I would love to add more crock pot meals to my freezer...let me know if you have any favorites.


Whatcha reading?

I just finished reading 'Dear Carolina' by Kristy Woodson Harvey.  This was a great book.  Even more so since I know the author.  She is a graduate of the school I teach at and I remember her as a little girl.  She is from my little city of Salisbury.  Check it out.  What are you reading?  I'd love some new book suggestions to check out.



Whatcha working on?

I am working on what to plant in my fall garden.  This is very new to me.  I had a small garden for the first time and the only thing that I have gotten from it has been okra and a couple of strawberries.  We didn't have much rain around here this summer and it has been extremely hot so I think that is why my garden didn't do well.  I watered it every day but my Dad says it needs natural rain water.  I am not giving up though.  I'd love to know what you plant in your fall gardens and any tips that may help me with my garden. 

Whatcha looking forward to?

There is so much on the horizon that I'm excited about and looking forward to!!  I'm excited about beginning a new school year and getting to know my group of new kiddos.  The first weekend of October I'm going on a weekend trip with 11 girlfriends to the Extraordinary Women's Conference in Roanoke, VA and am really looking forward to a weekend to refresh my soul!!  Then the middle of October I am going on a weekend retreat with my church.  This is always a great time in the NC mountains.  I come home blessed and renewed!  What do you have coming up that you are looking forward to?
