Tasty Tuesdays: Parmesan Crusted Chicken #Recipe


There's a restaurant that my family enjoys dining at, which makes a super delicious Parmesan Crusted Chicken. It's always so moist on the inside, crispy on the outside, and is served with yummy sides, too! Instead of paying $10.00 per dinner to enjoy this dish, I've come up with my own copycat version of this favorite meal, which I have been making at home and serving to my family for several years.


Looks good, right? The recipe is super simple to follow and you can make this pretty much any night of the week. 

Here's what you'll need:

1-2 Boneless, Skinless Chicken Breasts, which have been filleted (i.e. cut in half.)
Creamy Casear Dressing
Panko Crumbs
Cooking Spray

Directions: Pre-heat the oven to 350 degrees, and spray the bottom of a baking dish with a light coat of cooking spray. I use canola oil spray.

Step 1: Fillet the chicken breasts.

Usually, the chicken breasts we wind up with are super thick, so I fillet them to make them thinner. They take way less time to bake this way.

Step 2: In prep trays, pans or plates, add a good amount of Caesar dressing to one prep tray, and a generous amount of panko crumbs to the second one.

Step 3- 'Wash' the chicken in the Caesar dressing...

Make sure to completely cover the chicken with the dressing.

Step 4- Coat the chicken in the panko crumbs.

Fully cover the chicken in the panko. I like to gently shake my prep trays a bit, so the chicken moves from side to side in the prep trays, getting fully coated by the crumbs.

Step 5- Place the chicken into an oven safe baking dish, which has been lightly coated with cooking spray oil. Add a light spray coating to the top of the chicken before placing it into the oven. This helps the panko crisp up and turn that nice golden brown color you're going to want it to have.

Allow the chicken to bake for 25-30 minutes (oven time and temp may vary), until cooked through.

The chicken should look nice and golden brown when it comes out of the oven, like this.

Plate the chicken, and serve with your favorite sides. I chose to serve this with steamed green beans, and cheese ravioli, tossed with a seasoning and Parmesan cheese. We also added a bit of Parmesan cheese to the green beans, which was so delicious!

Serve with your favorite sides- a favorite of mine is cherry tomatoes in a light Italian dressing, but hubby doesn't like tomatoes, so I went with the green beans.

Dinner is served! 

We never get super fancy for our meals or anything, but I know that after my husband has worked a long, hard day, he does appreciate coming home and sitting down to a meal like this. I am trying to get back into cooking, and to preparing old family favorites!

Moist, and crispy chicken... so delicious!

The Caesar dressing works to seal moisture into the chicken, and the crispy Panko coating on the chicken makes it nice and crunchy. I used a plain Panko crumb for this, but you could use an Italian blend, or a Parmesan and Garlic blend, to up the extra flavor boosts!

This is a great meal to prepare for friends or guests, or your family. I like to have a nice crisp glass of white wine with this dish, such as a Riesling or Moscato, Pino Grigio, or if you prefer a drier wine, perhaps go with a Chardonnay.
