When you're entertaining, it's important to have a few good go-to recipes that you know even the pickiest eaters will gobble up and beg for more! Dishes that taste great both warm or at room temperature are what you want for parties, games, and mixed company!
I thought that I'd try out a Frittata recipe (my first attempt at making any type of frittata) that I knew my hubby would love, and hope that you'll try and enjoy with your family and friends, as well!
Two-Cheese Pasta Frittata
Prep: 10 minutes
Cook time: 15 minutes
Makes: 4 servings
You Will Need:
2 Tbsp Extra Virgin Olive Oil
2 Ounces of pancetta or 2 strips of bacon, chopped
3 Cups cooked fettuccine
6 Eggs
1/2 Cup Feta cheese crumbles
1 Plum tomato, chopped
1/2 Cup Pesto sauce
1/2 Cup grated Parmesan cheese
Salt and Pepper, to taste
Directions:
1) Heat your broiler. In an oven-proof 12" nonstick skillet, heat the oil over high heat. Add the pancetta or bacon and cook until browned and crisp. Stir in the Fettuccine (pre-cooked/boiled) and stir, until warm.
2) In a large bowl, beat together the eggs, and add the remaining ingredients to the egg mixture. Season with salt and pepper. Pour the egg mixture over the fettuccine (in the skillet) and cook without stirring for about 4 minutes, until the bottom is set.
3) Broil the frittata (still in the skillet) about 2 to 3 inches from the heat, until browned and bubbling (for about 2 to 3 minutes).
4) Remove from the oven. Using a spatula, loosen the bottom and sides, and slide into a serving dish. Do not cut, while still in the skillet- you might scratch your pan! Cut into wedges and serve as a side, or even as a main dish.
Yum, yum, yum! Everyone at our house loved this recipe, and I loved how easy it was to make! We served it as a side dish, alongside grilled chicken breasts. The next time I need to make a side dish for a gathering, this is what I'll be bringing along!
