Delicious Pork and Broccoli Rice Skillet

Welcome to my kitchen! Today, I'm excited to share one of my favorite weeknight recipes: a savory Pork and Broccoli Rice Skillet.

This dish is not only delicious but also incredibly easy to make, requiring minimal ingredients and effort. Perfect for busy evenings or when you want a comforting meal without spending hours in the kitchen.

Ingredients

For this recipe, you will need:

  • 1 lb (450g) pork tenderloin or pork chops, thinly sliced
  • 2 cups broccoli florets
  • 1 cup jasmine or long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp sesame oil (optional, for added flavor)
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional, for a bit of heat)
  • Sliced green onions and sesame seeds for garnish (optional)

Instructions

  1. Prepare the Ingredients:

    • Start by slicing the pork tenderloin or pork chops into thin strips.
    • Chop the broccoli into bite-sized florets.
    • Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Cook the Pork:

    • In a large skillet or pan, heat the olive oil over medium-high heat.
    • Add the sliced pork to the skillet and season with salt and pepper.
    • Cook the pork for about 5-7 minutes, or until it's browned and cooked through. Remove the pork from the skillet and set it aside.
  3. Sauté the Aromatics:

    • In the same skillet, add the chopped onion and cook for 2-3 minutes until it becomes translucent.
    • Add the minced garlic and cook for another minute until fragrant.
  4. Cook the Rice:

    • Add the rice to the skillet and stir well to combine it with the onions and garlic.
    • Pour in the chicken or vegetable broth, soy sauce, and sesame oil (if using).
    • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes.
  5. Add Broccoli and Pork:

    • After 15 minutes, add the broccoli florets and cooked pork back into the skillet.
    • Stir everything together, cover, and cook for another 5-7 minutes, or until the broccoli is tender and the rice is fully cooked.
  6. Final Touches:

    • Taste and adjust the seasoning with more salt, pepper, or soy sauce if needed.
    • If you like a bit of heat, sprinkle in the red pepper flakes.
  7. Serve:

    • Once everything is cooked through and well combined, remove the skillet from the heat.
    • Garnish with sliced green onions and sesame seeds if desired.

Tips and Variations

  • Vegetable Variations: Feel free to add other vegetables like bell peppers, carrots, or snap peas for more color and nutrition.
  • Grain Options: You can substitute the white rice with brown rice or quinoa for a healthier twist. Just adjust the cooking time and liquid accordingly.
  • Marinade: For an extra burst of flavor, marinate the pork slices in a mixture of soy sauce, garlic, and a bit of honey for 30 minutes before cooking.

Conclusion

This Pork and Broccoli Rice Skillet is a versatile and flavorful meal that can be customized to suit your taste preferences. It’s a fantastic way to enjoy a balanced dish with protein, vegetables, and grains all in one pan. I hope you give this recipe a try and love it as much as I do!
