My Husband's Yummy Alfredo Recipe - Happy National Pasta Day!

Today is National Pasta Day! To celebrate, I am sharing what is on the menu tonight - my husband's delicious Alfredo!

My husband and daughter LOVE pasta! They will eat any type of noodles, any time of the day. Although I'm not as much of a pasta eater as the two of them, I do enjoy a good Alfredo sauce with a serving of zucchini noodles or gnocchi -"the impasta" of the pasta family. Some sources claim gnocchi as a type pasta while others say "no" because of its ingredients. Either way, we are celebrating national pasta day by eating chicken Alfredo with gnocchi for supper.

Since he is the pasta connoisseur, I usually let my hubby make our pasta dishes. He is an amazing cook and makes the best Alfredo sauce! For years we bought the pre-made sauce in a can. Caleb tried making it from scratch one time and we have rarely used premade since. Once you try it yourself and see how easy it is to make Alfredo from scratch, I have a feeling you will love it as much as we do.

Caleb's Alfredo Sauce

- 3 Tablespoons of butter 

- 3 Tablespoons of all purpose flour 

- 1 clove of garlic (minced)

- 1 1/2 cups of heavy cream

- 8 ounce wedge of parmesan (grated)

Add the garlic and butter to a pan on med heat. Brown the garlic and allow it to infuse the butter. This takes about a minute.

Add the flour and cook it down for about 30 seconds before slowly adding your heavy cream in 1/4 cup increments - bring to a simmer. 

Remove the pan from the heat and stir in the parmesan. We prefer to use freshly grated parmesan because it melts smoother and faster. You can use pre-grated, it just might take a little longer to melt. Stir until smooth.

Serve atop your favorite pasta and/or protein and enjoy!

We usually serve this sauce with grilled chicken, gnocchi (or fettuccine), and broccoli.
