On the Menu - Sweet Honey Whiskey Salmon Bites

With the perfect balance of sweet and smoky, these honey whiskey salmon bites are sure to be a hit with your family!

I have to give a huge shout out to my hubby who came up with this delicious recipe. When my husband and I first got married, I did most of the cooking but things changed when I became pregnant with our daughter. I couldn't stand to cook because *ALL* of the smells made me too sick. My husband started watching cooking videos and drastically grew in his cooking skills. Now it's like I have my own in-home personal chef. He is constantly coming up with amazing recipes such as this one. I hope you enjoy it as much as we did!

Filet of Salmon (preferably fresh)

1 Tbsp olive oil

2 cloves of chopped garlic

1 tsp pepper

1 tsp paprika

1 tsp salt

Leaf of fresh basil

1 shot of honey whiskey

1 Tbsp honey

1 Tbsp brown sugar

1 Tbsp butter

Skin or descale the salmon filet and cut into cubes. Season the salmon with the cut basil leaf, pepper, paprika, and salt. Add olive oil to your pan and turn the heat to medium. Add garlic and allow to lightly brown. Introduce the salmon to the pan with the browned garlic. Cook until mostly done, then add the shot of whiskey. Use a lighter to light the whiskey on fire inside of the pan to burn off the alcohol (Do this instead of boiling it down, which would overcook the salmon). Add honey, brown sugar, and butter and cook until it becomes a glaze and thoroughly coats the salmon.

We cooked up some squash and zucchini fresh from the garden along with a bit of quinoa. Other side ideas could include broccoli and rice, or roasted potatoes and asparagus - really this dish is so versatile that any of your favorites would pair nicely.
