I really enjoy cooking, but since I went back to work full-time about three years ago, I hardly have the time to do it anymore. About two years ago my Mother-in-Law moved in with us, and she usually does most of the cooking, and I'm very appreciative of her for taking that on. Every once in a great while, I'll get a request from my Hubby, or if we're on vacation, my brother-in-law, for my Mac 'N Cheese. 

I know that Mac 'N Cheese is a touchy subject. Everyone likes it a certain way and some people wouldn't dare give up their recipe, but I really do enjoy making it, so I thought I would share my recipe or a rough idea of my recipe. You see, I don't follow recipes, and I measure to taste and make things up on the fly. I eat at a restaurant and then like to go home and try to recreate that recipe myself. Sometimes it works out, and other times it doesn't. I just happened to try my hand at making mac 'n cheese one day, and it turned out pretty well, and I've been making it ever since! Again, my recipe isn't exact each time, and I season to taste. Some days I go heavy on the garlic and onion, other times I go lighter on those and heavier on the spice. You see, that's what's great about something like this, you can easily adapt it to your own liking!
