Crispy Parmesan Potatoes

 


Are you tired of fixing potato side dishes the same old way all the time? I have very few potato recipes that I try to make for my family because they are just so darn picky about everything they eat. For someone who loves variety, this can be sort of difficult for me. The other night, I was making preparations for dinner, and I thought- you know what, I'm just going to try something new... because I want to!

I called my six-year-old helper into the kitchen to help me make some baby potatoes extra delicious for dinnertime. I sliced them lengthwise (after washing, of course), and had Bean help me coat the potatoes in melted butter. After the potatoes were coated, we dipped them (sliced side down) into a mixture of grated parmesan cheese, salt, pepper, garlic powder, and oregano.

We placed the sliced potatoes cheese side down onto a baking sheet lined with parchment paper, and into a 425 degree preheated oven for 30 minutes. While the potatoes were baking in the oven, I boiled a few brats in beer on the stove for a tasty compliment to this yummy potato dish. The time that it took to boil and then grill the brats gave the potatoes just enough time to cook through and become extra crispy. It was perfect!

After about 25 minutes, the potatoes were looking tender throughout and crispy on the bottom.

Since this was a new recipe, I wasn't sure how the potatoes would turn out, but I was pleasantly surprised that they looked like they turned out the right way. Sometimes oven-roasting potatoes can be tricky, depending on your oven. I should note that these were baked in a gas oven.

Golden, crispy, and delicious cheesy potatoes!

The potatoes couldn't have turned out better! They were fork tender, and golden and crispy on the bottom. The pressed-on cheese mixture was absolutely delicious! These were amazing as a side dish- though I probably could have just eaten the potatoes, and nothing else for dinner that night!

Brats and crispy parmesan potatoes, anyone?

These crispy, cheesy potatoes were the perfect compliment to our beer brats for dinner. Next time you need a potato dish, skip boring old potato salad and try this recipe instead! You won't be sorry!
