Did you know today is National Peanut Butter Cookie day? I didn't. I recently read an article describing how this was the cookie to make during the depression because the ingredients were the easiest to come by. My Gram lived through the depression with eight brothers and sisters and boy does she love cookies. Here's to my Gram.
What you will need
1 cup creamy peanut butter no sugar added
3/4 cup sugar
1 large egg
Combine all ingredients until a dough is formed.
Use a melon baller or ice cream scoop to get ball shapes and lay on a parchment lined cookie sheet. Bake at 350° for 8-10 minutes.
Let cool and enjoy.
