Are you and your family itchin' for some chicken, but your chicken dinners have become routine and stale? My kids are not big meat eaters (though they do surprise me and like pork), so we eat chicken- a lot! Recently my kiddos came to me while I was making dinner and whined, 'Chicken again!?' I just stood there and asked them, 'What else do you two like?' I mean, they're picky kids, and my husband can be picky, too, which makes meal planning difficult for the gal who would eat just about anything, and loves variety!
While my hubby isn't a huge fan of slow cooker meals, he's bracing for the fact that they will soon be returning to our meal plan on a regular basis. With a soon-to-be new baby at home, I'll need all of the quick and easy meals I can get my hands on in order to feed my small army.
Slow cooker cooking is really sort of one of those things ya either love or hate. I love the ease of it, and hate cleaning the darn thing out afterward, but it's worth it to me to not have lots of pots and pans to wash. Being able to quickly throw something together before noon and have it ready by 5 pm is absolute gold to me right now.
We wanted to have something similar to chicken and dumplings, without the mushy biscuit dumplings. My husband doesn't care for them, and honestly, neither do the kids. They prefer a crunchy-topped biscuit, so we decided to compromise with creamy slow cooker chicken served over homemade biscuits (yes, the kind you make from scratch).

Here's what you'll need:
1-2 lbs of chicken breasts (skinless)
1 can of cream of chicken soup
1/2 can of water
6 oz chicken broth
1 tsp garlic powder
Salt and pepper to taste
Directions
Dump all ingredients in your slow cooker.
Set it to cook on low for 5-6 hours.
You know what they say- set it and forget it! Walk away and let it do its thing!
About an hour before dinnertime, prep the biscuits (you can make drop biscuits from scratch, use a Bisquick mix, or use canned biscuits- whatever floats your boat!). Make the biscuits about 20 minutes before you plan to serve dinner. While the biscuits are baking, shred the chicken in the crockpot. If you feel the mixture is too thin, thicken with a drop of cornstarch. Spoon the chicken over the biscuits and serve with a salad or other veggie of choice.
I literally threw this together in 10 minutes, right before I needed to leave the house to pick my daughter up from half-day Kindergarten. I could have just as easily put the chicken in frozen and set the temp to cook on high and it still would have been done by dinnertime. You could serve this over noodles or rice, or just on the side of other sides- whatever you like!
My family's verdict was that this meal was delicious. It made a lot, and I ate on the leftovers at lunchtime for the rest of the week. With a new baby coming, anything I can heat and eat for lunch will be a huge help.
