The Ultimate Zesty Fajita Marinade for a Taste of Summer Year Round

 


One of my favorite foods of all time has got to be fajitas. Steak, chicken, pork... I love them all! I don't play favorites when it comes to fajitas or tacos (but no fish or shrimp for me, please). Finding just the right seasoning or marinade for fajitas has been difficult through the years. For a long time, we used a seasoning mix, but found that it was no longer being made. I searched high and low for a similar seasoning, but none of them were just right, so I decided to make my own, and it's probably the best fajita seasoning I've ever had.

We've been grilling just about everything we can get our hands on these days, for lighter, healthier meals. This seasoning is great for grilling, but it's also just as nice for making fajitas on the stove or in the oven. The choice is up to you!


Ultimate Zesty Fajita Marinade

4 Tbsp Olive Oil

2 tsp Paprika

1/2 tsp Garlic Powder

1 tsp Chili Powder

1/2 tsp Sea Salt

1/2 tsp Black Pepper

1/2 tsp Cayenne Pepper

The juice of 1/2 a lime

10 - 15 Fresh Cilantro Leaves, chopped


Directions

Whisk all of the ingredients together in a small mixing bowl.

In a Ziploc bag or container with lid, pour the marinade over choice of protein and let sit for at least 20 minutes before cooking or grilling. It's best if you can marinate overnight in the fridge!

Let the protein come to room temperature before cooking.





Cook, Bake or Grill

We usually grill chicken tenderloins for fajitas. They should be grilled for about 3 minutes per side. Be sure to check the internal temperature of the chicken (or any meat) before serving. I am extra cautious with chicken.

Slice the grilled chicken and add to a nice salad, serve over rice, or as traditional fajitas in tortilla shells. We always grill up bell peppers and onions to go along with our fajitas, and the combo is so tasty!


Bump Up the Flavor!

For added flavor, add more fresh cilantro and a squeeze of fresh lime to your assembled bowl or plate. I love the kick from the marinade, and the added hint of lime with an extra squeeze at the end! Don't like cilantro? Leave it out! I happen to LOVE cilantro like I love basil (no such thing as too much of it to me), so I always add extra. It's totally up to you, though- you can always omit it from the marinade.


However you choose to enjoy this flavorful marinade, I hope you'll give it a try! My husband said he doesn't want to go back to making fajitas any other way, and I totally agree with him.
