Blueberry Goat Cheese Sourdough Bread
Ingredients:
- 285g water (slightly warmer than room temp)
- 175g Sourdough Starter
- 10g Salt
- 2g Lemon Peel (optional)
- 1/8 t Cardamom (optional)
- 425g All-Purpose Flour
- 120g Blueberry Goat Cheese, roughly chopped (about half a log)
- 65g Blueberry Jam (optional)
- 40g Honey (optional)
Steps:
- Mix together ingredients through Flour and let rest for 30 minutes. If you put them in your mixing bowl in this order, they’ll integrate well and easily.
- Knead for 1-2 minutes.
- Add Remaining ingredients and need for 5-7 minutes. This makes a fairly sweet loaf, you can reduce the jam and honey to your own taste. Note: If you can’t find the log of blueberry goat cheese, you can use plain goat cheese and slightly increase the jam and honey, add dried blueberries if you like.
- Cover and allow to rise in the fridge for 36-48 hours; because of the cheese, you need to rise it in the fridge, but this slows the rise significantly. Please do not rush this, I promise it’s worth the wait.
- Remove from fridge and pour directly into greased 9x4 loaf pan. Rise for 2-3 hours.
- Toward the end of your rise, preheat your oven to 475* and bake covered for 25 minutes.
- Reduce heat to 425 and cook for 15-25 minutes, until your loaf is fully cooked and sounds set when you thump the top.
- Allow to cool 5 minutes in the loaf pan then place on cooling rack to fully cool before slicing. My favorite way to eat this is toasted with peanut butter, but it’s excellent on its own, with butter, or as a sweet sandwich.
