Day After Thanksgiving Leftovers Casserole Recipe


I have a big family, so every Thanksgiving, we're feeding a crowd. Somehow though, we always overestimate how much food we need and end up with a ton of leftovers. A few years ago, my mother started making this Day After Thanksgiving Leftovers Casserole. It uses nearly everything on the traditional Thanksgiving table, whips up in about 30 minutes, and is oh so yummy. With gatherings being smaller this year, you're sure to have extra food and this casserole is the perfect solution for all those leftovers.

1. Spread mashed potatoes over the bottom of a casserole pan
2. Cover with turkey gravy
3. Layer chunks of turkey (white and dark meat) to cover casserole pan
4. Layer stuffing (in my family, we call it dressing!) over the turkey meat
5. Cover with more turkey gravy
6. Add cranberry sauce over top
7. Heat on 350° until warm/hot (about 20-30 minutes).

I think the best part of this dish is that it really reduces the amount of Tupperware that inevitably crowds your fridge in the week after Thanksgiving! All of your leftovers are assembled into one delicious pan.
