Caramel Apple Cinnamon Rolls

One of my favorite things about fall, besides the weather, is all of the yummy fall foods. One in particular that stands above them all is, Caramel Apples!  I enjoy going to our local fair, taking in all of the sites and sounds, while eating a delicious caramel apple. I mean, I once won a competition in college where I made and marketed caramel apples, that's how much I love them! I've been itching to make them at home, but I didn't want to make a large batch of apples because I'm the only one who'll eat them. Now, my hubby on the other hand loves cinnamon rolls and usually asks for me to buy some so he can have while I'm at work on the weekends. While in the store looking for cinnamon rolls, I had a great idea, why not combine caramel apples and cinnamon rolls into one great dish?

So off to the store I went to find some apples, caramel cubes, and cinnamon rolls. I had everything else I would need, or so I thought, at home. After a quick trip to the store, I immediately came home and got to work only to quickly realize that I indeed did not have any clove or allspice, but I had plenty of cinnamon and vanilla extract, so I figured that would work, and boy did it! I'm so excited to share this with you and can't wait for you to try them.

Start off by washing and drying your apples and pre-heating your oven to the temp on your cinnamon rolls. Core, cut, and chop apples into small pieces. Remember not to cut them too small because they'll shrink when you're cooking them.  Add 1tbs of the cinnamon to the apples and stir to evenly coat the apples. Melt the butter in a saute' pan over medium heat and add the apples. Cook until the apples begin to become soft, then add the vanilla and cinnamon while stirring the apples to combine the flavors. Continue to cook over med-low heat until apples start to change colors and become soft, then add the brown sugar. Continue stirring the apples and reduce heat to low and continue to cook apples for another 2 minutes. Remove from heat and set aside.

Pull apart cinnamon rolls, place them into your pan, and press the middle down to the bottom of the pan creating a bowl. Cook in the oven for half of the time on the package. (This will keep the inside from getting too soggy and not cooking.) Once half baked, take our of the oven and spoon the apple mixture into each cinnamon roll, and drizzle the sauce over the top of each one. Bake for the remaining time, but check the rolls. I ended up cooking mine for an additional 3 minutes to get it browner.

While the cinnamon rolls are baking, make your caramel! In a microwave safe bowl, add 6 caramel cubes and the water. Microwave for 30 second intervals, stirring between each one. Once the caramel is melted, set aside to thicken just a bit. Once the rolls are done, take them out of the oven and immediately drizzle the caramel over each roll. Let the rolls cool off, but not completely, as these are best served warm, and enjoy!

You may want to serve with some whipped topping or just eat them as is, either way, they are delicious. However, don't expect there to be leftovers, because they are going to go fast!

If you decide to try it, let us know!
