Making My Husband's Favorite Dessert


 

Once in a while, I use the rice cooker to make sticky white rice. When I do, my hubby gets a special treat!



When we were dating, we loved visiting our favorite Thai restaurants in Maryland. Once, on a whim, my husband decided to order the coconut rice for dessert. He absolutely loved it and decided it would be one of his favorite foods on the planet. Obviously, I needed to figure out how to make this dessert if I was going to marry this man! 

Twenty years later, I confess I have not made it nearly as often as I once thought I would, but it's probably best for our waists that I haven't! Recently, I had leftover rice and decided it had been far too long since I treated him to this delicious dessert. 

I simply add 1 can of unsweetened coconut milk to a pot and heat it to a simmer. I add a few tablespoons of sugar and a few tablespoons of heavy cream. What I do not have pictured is vanilla extract. This just adds a touch more flavor. Add in your cooked, sticky rice and stir everything until creamy and thick.


This is how I like my coconut rice to look in the pan. It may seem simple and you may think you do not like coconut, but you have to trust me- this dessert is divine!

It also makes for a great comfort food for little ones who may not be feeling the best. Coconut milk has electrolytes, improves digestion and relieves constipation. It's just a feel-good treat that sits nice and warm on the tummy.
