Sweet Summer Treat...Strawberry Cobbler

We are coming to the end of strawberry season here in NC and my family has definitely had our share this year.  We have several wonderful farms here that offer strawberries.  We were very sad that there was no pick your own this year, but we enjoyed them anyway.  My favorite way to eat strawberries are just after they are washed.  Yum!!  My second favorite way is strawberry cobbler.  This recipe is super simple and absolutely delicious!  It was shared with me by a friend and I'm excited to share it with you all.
We always have to buy the big containers of strawberries to make sure there are enough to eat alone and still have for our cobbler.  Here is the recipe that I use:

1/2 cup salted butter
1 cup self rising flour
1 1/2 cup sugar (divided)
1 cup milk
1/2 teaspoon vanilla extract
4 cups strawberries, halved

Pre-heat oven to 350.  Melt butter in casserole dish as the oven warms.  Whisk together flour, 1 1/4 cup sugar, milk and vanilla.  Pour into the melted butter without stirring.  Toss 1/4 cup sugar with strawberries and spoon into mixture, without stirring.  Bake until crust has turned light golden brown.  I usually bake for about 35-40 minutes.
