Picnic Perfect: Cold Corn Salad #Recipe


Happy Memorial Day! While today is a day to remember those who gave the ultimate sacrifice to keep us safe, it's also a day to give thanks and remember how very blessed we are to live in The Land of the Free. We know that freedom isn't free, and during a time when so many feel as though their freedoms are being restricted or taken away, today is a wonderful time to count our blessings and say a big 'thank you' to all who work to keep us safe as a nation.


While we're used to pretty large gatherings on Memorial Day, the 'unofficial kick -off of summer,' this year, Memorial Day looks a little bit different. We're probably not headed to pools for big community cook-outs, and you might not be ready to head to the nearest beach or lake- yet.

We're having a very small gathering with close family today, following our state's guidelines on gatherings. We'll grill kabobs, enjoy some fun and games while maintaining social distancing, and of course- this family fun day will take place at my family's new home. I love for our home to be the 'gathering place' for our family. It bring me a lot of joy.

While everyone will be bringing food to enjoy later today, I wanted to make a fresh, summer salad to enjoy alongside chicken and grilled veggies, so I chose to make a delicious and tangy corn salad.
It's easy to throw together with corn from the freezer, and a few simple ingredients you probably already have at home.

Cold Corn Salad

You Will Need

4 Cups of Corn (I like to use fresh off the cob corn)
Crumbled Feta Cheese (1 Cup)
1/3 Cup Mayo
Fresh Cilantro (chopped)
1 Tbsp Minced Garlic
1/4 tsp Cayenne Pepper
The Juice of 1 Lime
Sea Salt

This simple recipe is so easy! 
Add the corn to a serving bowl. You can use frozen corn- just be sure to thaw it before putting the salad together. 

Fold the mayo in with the corn.
Add garlic, and seasonings to taste.
Squeeze in the juice of one lime, and gently toss.
Add crumbled Feta, and gently toss to incorporate.
Add fresh cilantro and lightly toss.

Cover and refrigerate.
Serve cold - or at room temperature.
*This salad tastes better the longer it sits!

Serve as a side dish, or with tortilla chips!

I cannot wait to enjoy this delicious salad today!
It definitely reminds me of Mexican Street Corn, so if you're a fan of that dish, you will absolutely love this salad!
